CNY Peanut Cookies

I joined my parents to make our CNY peanut cookies during the Thaipusam holiday. Yes, don’t be surprise, my dad always helping my mum making cookies before CNY. We make it for our family members, not for sale, hehe…Mum prepared 1.2kg roasted peanuts, 1.2kg wheat flour, 1.2kg icing sugar, about 2kg “Knife” ground nuts cooking oil, and 3 egg yolks.

To prepare the peanuts, mum saute the peanuts (just the peanuts, no oil) in a wok under low fire. Continue to saute it non-stop to prevent the peanuts from over-roasted. This will ensure to get a nicely colored peanut cookies. Saute till the peanuts turn crunchy. Let it cool down and remove the skin. Blend the peanuts into powder, and pour it into a big container to mixed well with flour and icing sugar. When everything is mixed well, add peanut oil and knead until even.

This is how it looks after mixing the peanut powder, flour, icing sugar, and ground nut cooking oil.

The cookies are ready for baking now.

Let it cool down before storing into an air tight container.
